New England Lobster Roll
Recipe:
4 Fresh Bakery Rolls
1 lb. Lobster
2 T. Olive Oil
4 T. Butter - divided use
1/8 t. Italian Seasoning
3 Garlic Cloves Sliced
3 T. Fresh Chopped Chives - divided use
1/4 C. Sliced Green Onions
Salt to taste
Juice of One Lemon - divided use
1/2 C. Kensington Mayonnaise
1/4 t. Smoked Paprika
Chop lobster into chunks, then set aside.
Combine 1t. lemon juice with Kensington mayonnaise, smoked paprika and 1T. chives. Set aside.
Heat grill or griddle Take 2T. of butter and mix with the Italian Herbs. Slice bakery rolls lengthwise and spread butter mixture through the center. Then spread butter mixture on the sides of the rolls. Brown buns on all sides and through the center on griddle or grill.
While buns are browning melt 2T. butter in large sauté pan on medium heat. Add olive oil. Saute garlic and green onions in butter and olive oil for 3 minutes or until tender. Add lobster chunks. Cook for 3 minutes then toss with 2T. lemon juice and 2T. chives. Cook one additional minute then remove from heat. Add salt to taste.
To plate, fill grilled buns with garlic lobster mixture and then drizzled smokey lemon mayo. Garnish plate with fresh black pepper and serve with a garden salad.
Pair with a Sauvignon Blanc or Citrus Lager Beer.
