Tangy Thai Shrimp Lettuce Wraps

Recipe:

1Dz. Cooked Shrimp

1 Head Boston Bib Lettuce

2 Radish - sliced thin

1/2 C. Snow Pea Pods

1 t. Toasted Sesame Oil

1 T. Ponzu Sauce (may substitute with soy sauce)

Dressing:

1/4 C. Rice Vinegar

1/2 C. Sweet Miring Wine

1/2 t. Celery Seeds

1 t. White Sesame Seeds

1 Green Onion Sliced

1 t. Toasted Sesame OIl

2 T. Canola Oil

  1. Wash and dry lettuce leaves, set aside in refrigerator to keep cold until ready to assemble lettuce wraps.

  2. Slice shrimp lengthwise. Return to refrigerator to keep cold until ready to assemble lettuce wraps.

  3. Drizzle the first teaspoon of toasted sesame oil in a small sauté pan. Place snow pea pods in the pan and sauté over medium heat until bright green. Pour the ponzu sauce over snow peas and toss. Remove from heat.

  4. Combine dressing ingredients and let set for at least 15 minutes.

  5. To assemble lettuce wraps, place leaf down flat and layer with snow peas, shrimp and then radish slices. Spoon dressing over lettuce leaves and serve. Lettuce wraps can be assembled before your guests arrive with the exception of the dressing. Refrigerate wraps until ready to serve. If prepping lettuce wraps ahead of your guest’s arrival, then serve dressing on the side. See serving presentation photo below.
