Berry Salad with Whipped Feta and Champagne Vinaigrette

6 Oz. Spring Mix Lettuce

6 Oz. Fresh Blackberries

1/2 C. Fresh Sliced Strawberries

1/2 C. Fresh Blue Berries

1/2 C. Cinnamon Pecans (recipe below)

Whipped Feta (recipe below)

Champagne Vinaigrette (recipe below)

  1. To plate, layer mixed greens, berries and pecans. Spoon 3-4 dollops of whipped feta onto the plate.

  2. Top with cinnamon pecans and vinaigrette.

Cinnamon Pecans Recipe:

1 Lb. Pecan Halves

1 Egg White

1 T. Water

1 1/2 t. Cinnamon

1/2 t. Salt

1 C. Sugar

  1. Mix egg white and water with a fork until frothy. Stir in pecans until well coated.

  2. In a separate bowl, mix cinnamon, sugar, and salt. Add cinnamon mix to pecans. Stir.

  3. Line a cookie sheet with parchment paper. Place pecans in a single layer on parchment paper.

  4. Bake at 250 degrees for 30 minutes. Remove pecans from oven, stir then return to the oven for an additional 30 minutes.

Whipped Feta Recipe:

6 Oz. Feta (block)

2 Oz. Cream Cheese (room temperature)

1/3 C. Olive Oil

2 T. Fresh Squeezed Lemon Juice

2 T. Minced Shallots

2 t. Minced Garlic

  1. Crumble feta, then place feta and cream cheese in food processor. Pulse until the cheeses are mixed.

  2. Add olive oil, lemon juice, minced shallots and minced garlic. Process until smooth. Place into a storage container. Cover and refrigerate for 2-3 hours or until firm.

Champagne Vinaigrette Recipe:

1/2 C. Champagne Vinegar

1/2 C. Apple Juice

2/3 C. Canola Oil

1 t. Garlic Salt

1/2 t. Black Pepper

2 t. Sugar

  1. Combine all ingredients above in a salad dressing bottle and shake vigorously. Refrigerate for 1 hour and shake again.
